Dinner and a Movie!

WOW – As we reflect over the last ten years and are approaching our 10th anniversary of Back to Eden Health Ministry in September, we stand in awe of how God has grown this ministry. We’ve had a couple exciting months here lately.

Psalm 37:4 states, “Delight yourself also in the Lord, and He shall give you the desires of your heart.”

Dinner and a Movie
Two weeks before our Dinner and a Movie event, we had six people signed up. I was starting to get a little discouraged and prayed for God to help us out. The next two weeks, the phone did not stop ringing and we signed up 69 hungry people. Last year we had 40 people. Two and one half days of food preparation and everyone got to enjoy the movie and had a leisurely four course dinner.

Her creativity in the kitchen is such a compliment to our ministry. One bite of this salsa and you will want to dance. An old Indian Proverb states “to watch us dance is to hear our hearts speak.”

There are many benefits to eating local foods that are in season. The flavor and nutritional values are at their fullest. Also, local, in-season foods are at their best price and they have less of an effect on the environment.

  1. FreshFlavor - When produce is being shipped from across the world, it is usually picked before it is ripe so that it can withstand the shipping process. Many of these foods are then gassed to force ripen them during transport and/or waxed to preserve them. Ever notice that the tomatoes in a supermarket are all the same color? This is because they were gas-ripened. All of these things affect the flavor of your produce.
  2. Nutrition - Foods that are in-season and grown locally are more nutritious because nutrients degrade during the shipping and storing process. Produce is most nutritious when eaten within a few days of picking. Apples, for instance, can be stored in a warehouse for up to 10 months before you purchase them in your local grocery store. Which would you rather have? A freshly-picked apple, or a 10-month-old apple?
  3. Price - This is a simple one: it is all part of supply-and-demand! When foods are in-season, they are more readily available, and therefore less expensive.
  4. Environment - Shipping foods thousands of miles uses a lot of energy and causes a lot of unnecessary pollution through carbon emissions.
